It’s Time for a Vote: Merry’s vs. Lloyd’s Breakfast

So, everyone knows opposites attract, right? Well the fact of the matter is Lloyd and I have opposite opinions on many things, but food is probably a big one.
Let’s take breakfast for instance. Now as a white chick, breakfast to me is waffles, eggs benny, crepes, oatmeal, muffins, fruit, hash browns and the like. My favourite special occasion breakfast is probably waffles. My parents were very practical and breakfast was always oatmeal. But, when we visited my cousins, my aunt would often make us waffles served with ice cream and fruit topping. Lloyd thinks this is ridiculous, because as an Asian dude, a great breakfast for him is what I would consider to be dinner food: Asian dinner food. So, we thought we would put it to a vote. Which one would you prefer? Leave a comment with your choice.

Above is a Korean breakfast I had at MY aunt’s house. Rice, fried spiced tofu, dried spiced radish, almonds, dried anchovy, kimchee (fermented pickled spiced cabbage), pickled radish, squid in a hot pepper sauce, pickled garlic, dried spiced squid, sheets of dried seasoned seaweed, kimchee stew, and a boiled chicken drumstick. It’s extremely healthy, super tasty, and VERY satisfying. What’s not to like? =) So we need as many votes as possible so I can show Merry how right I am. ha ha ha!

I thought that those dishes and cutlery familiar. Korean breakfast all the way…as long as I don’t have to prepare it. We usually have western breakfasts in our home for that reason.

Merry-I have to agree with Lloyd. I get hungry in 15 minutes if I don’t have protein. The eggs in the waffles don’t cut it. Maybe if you used buckwheat flour or something, or added in some bacon. And the ice cream–well, you know. Not for me. Lloyd–I have to agree with Merry. Your food is not what I would like to see or smell first thing in the morning. That boiled chicken leg made me gasp. Way too much fermented food at once. I would have severe indigestion and be burping up kimchee for 8 hours afterwards. But at least you have some protein. I can’t vote for either of you. Sorry.

Sorry Lloyd, I’m also with Merry on this one. I eat all kinds of weird stuff for breakfast because of my shift work, pizza, rice, chicken, in addition to breakfast food. But on a day off, when or if I’m working normal hours, nothing beats a belgian waffle (except maybe a nice crepe) with fruit/syrup and whipped cream. I guess the ice cream is just a little excessive for breakfast though.

I definitely wouldn’t be eating this every day, because as Lloyd pointed out, this isnt’ a very healthy choice to start your day, but every once and a while….MMMMM.

LOL…. This is gonna be hard…
I love waffles, crepes, eggs, etc for breakfast, but I also have to have my rice… Both dishes look delicious, but I think I’d rather prepare Merry’s dish because it is faster to prepare… I mean you can buy frozen hash browns from superstore and just cook it for breakfast and there you have it, it’s way faster to make… I like both dishes, why not have both? I do east breakfast sausage and rice together anyways… lol
Now I’m craving fish cakes! lol =P

Ok, Merry’s choice definitely gets my sugar beast awaje & roaring, but as someone who has practiced for years a 40%carb/30%protein/30%fat diet, I immediatley chose Lloyd’s as the one for me…tho I’m not too sure about that square green stuff….:)

Merry’s breakfast is my choice! I’ve had those waffles and they’re better than wheat flour ones. lloyd’s meal is delicious I’m sure but seems like supper to me. Plus Merry’s waffles go better with chocolate – an essential part of any good breakfast!

We’ll have some waffles soon then. Lindsay, swing by here with Kurtis to eat and get the recipe so Merry can enjoy some waffles with people who also love them. Honestly, Merry’s celiac waffle recipe tastes better than any regular waffle I’ve ever had. Celiacs unite!

So for those of you who WANT to have yummy waffles…. here’s the recipe. Two versions, one is Gluten Free, one is not. They taste the same. The instructions follow at the end of both lists of ingredients.
Gluten Free Version:
3 eggs separated
1 tsp vanilla
2-1/4 TBS melted butter (coconut oil works if you are dairy free too)
1/2 c tapioca flour
1/3 c corn starch
1/4 c rice flour
1/4 tsp xanthan gum
1/2 tsp salt
1/3 c amaranth
2/3 cup milk (rice dream / almond milk work okay too if you are dairy free)
NOT GLUTEN FREE VERSION:
4 eggs separated
1/2 tsp vanilla
3 TBS melted butter/ margarine
1 c flour
1/2 t salt
1 c milk
INSTRUCTIONS FOR EITHER RECIPE:
Turn on waffle iron. The single round Belgium makers make the crispiest and best waffles.
Separate eggs whites from egg yolks. In a medium bowl, beat egg whites in mixer until stiff. In a separate large mixing bowl, beat egg yolks in mixer on high for about 5 minutes. They should look fluffy. In the meantime grab yet another medium sized bowl and mix together all the dry ingredients. Add the vanilla and melter butter to the egg yolk mixture.
Now here is the important part!
Slowly add half of the dry ingredient mixture to the egg yolk/vanilla/butter mixture. Mix to incorporate. Then add half of the milk. Then repeat with the the other half of the dry ingredients and the milk. Make sure it’s mixed well.
Now fold in the egg whites to the mixture. It WILL and is supposed to be lumpy. That’s what makes them fluffy.
If you are unfamiliar with folding in egg whites – check out this demo: It’s for a different recipe, but he shows the technique perfectly.

Cook the waffles. With the gluten free ones, it is super important to make sure the iron is HOT and cook them about 2 times as long as you do the regular ones. Usually after I remove one gluten free waffle, I let the iron sit closed for a minute before putting in more batter. With the regular ones – you have it pretty easy – just keep putting batter in and follow the indicator light / sound on your waffle iron.
Now, for all those who said my breakfast was too sweet (LLOYD) there is absolutely no sugar in what is in the photo. I have a eating disorder named Simon so in addition to the usual gluten free stuff, I’m off dairy, soy, peanuts, chocolate, citrus, and tomatoes… I think that is everything… whatever helps him to have less mucous and reflux. Anyways, try to find dairy, soy gluten free ice cream. The best one so far is So Delicious with coconut milk. Which also happens to have no sugar and is probably one of the best ice creams I’ve had in a very long time. ( :
